Another option is hogtie someone, walk back till you can barely target them. For these challenges they have to be a red dot on the minimap to count as an enemy. Bandits and Gang camps.
I have done this challenge in chapter 2 with dead eye targeting level 1 (auto targeting, can’t even manually paint).
