I have 900 hours in EU4 and 150 hours in Vic3. Vic3 is mechanically a much more interesting game, but it doesn't have the amount of flavour as EU4. Yes, there are converter mods for all the games. CK2 even has an official dlc to convert the game to EU4. Playing from CK to Hoi4 or even stellaris is what's called a mega campaign. Just google CK3 to EU4 Converter, or EU4 to Vic3 and so on, and you will probably find the steam workshop page.

Consider converting states with high autonomy in EU4 to separate vassal polities in Vic3 (mimicking Tripolitania and Egypt for the Ottomans at the 1836 start). The calculation would be done on Vic3 state with values inherited from EU4.
