Dododex is good for info on taming things. For checking stats I use Smart Breeder. For griffins I highly recommend a longneck rifle and tranq darts. They do take quite a bit to knock out. Crossbows and tranq arrows can kill many things easily. I would find someone with atleast a mastercraft longneck and that will have you set to tame most anything.
